Kenya Premium AA Coffee
KENYA ARABICA COFFEE SELECTION
After the coffee is ripe and hand picked it is taken to the factory for milling, washed and dried. After the coffee is dry up to 12-13% moisture, the coffee is again milled and put into grades as below: T, TT, C, AB, PB, E, AA, UG1, UG2, MH and ML. Apart from the last two grades, which is MH&ML, the rest passes through the process of water which is fermented in bins for 72hours.
The grades are determined by the size of the screens as follows
E =Screen 21 AA =Screen 18
AB =Screen 15 C =Screen 12
PB =Screen 15
You will find that grade AB and PB are of the same screen but PB are round beans.
TT might be screen 18 and 15 and this is taken out from screen 18.
AA and screen 15.
AB but they are light beans in density and broken
A) Grade AA: This grade is later classified in 4classes according to the taste.
